Who Invented Potato Chips?
I’ll bet you love potato chips, but you never heard of George Crum!
George Crum (1822-1914)
The potato chip was invented in 1853 by George Crum. Crum was a Native American/African American chef at the Moon Lake Lodge resort in Saratoga Springs, New York. French fries were popular at the restaurant and one day a diner complained that the fries were too thick. Although Crum made a thinner batch, the customer was still not satisfied. Hoping to annoy the extremely fussy customer, Crum finally made fries that were too thin to eat with a fork. The plan backfired. The guest was ecstatic over the browned, paper-thin potatoes, and other diners started requesting Crum’s potato chips, which began to appear on the menu as “Saratoga Chips,” a house specialty.
And that’s how potato chips were invented!
In 1860 George opened his own restaurant in a building on Malta Avenue near Saratoga Lake. He placed baskets of potato chips on every table. Within a few years, he was catering to wealthy clients, including William Vanderbilt, Cornelius Vanderbilt, Jay Gould, and Henry Hilton.
His restaurant closed around 1890. He died in 1914 at the age of 92.
He never patented his creation.
