I started this “Good News” blog in July 2010 because I was tired of and disgusted by all the negative news and information.  I wanted to give people positive news and information.  I’m having a great time looking for, receiving, and posting these pieces!  Stay tuned!!

“Black History Month,” (February) is over, but I will continue Spreading Good News about Black History on what I will call “Black History Tuesday.”

BLACK HISTORY TUESDAY:  George Crum, Creator/Inventor of the Potato Chip

I’ll bet you love potato chips, but you never heard of George Crum!

George Crum (1822-1914)

The potato chip was created/invented in 1853 by George Crum.  Crum was a Native American/African American chef at the Moon Lake Lodge resort in Saratoga Springs, New York.  French fries were popular at the restaurant and one day a diner complained that the fries were too thick.  Although Crum made a thinner batch, the customer was still not satisfied.  Hoping to annoy the extremely fussy customer, Crum finally made fries that were too thin to eat with a fork.  The plan backfired.  The guest was ecstatic over the browned, paper-thin potatoes, and other diners started requesting Crum’s potato chips, which began to appear on the menu as “Saratoga Chips,” a house specialty.

And that’s how potato chips were created/invented!

In 1860 George opened his own restaurant in a building on Malta Avenue near Saratoga Lake.  He placed baskets of potato chips on every table.  Within a few years, he was catering to wealthy clients, including William Vanderbilt, Cornelius Vanderbilt, Jay Gould, and Henry Hilton.

His restaurant closed around 1890.  He died in 1914 at the age of 92.

He never patented his creation.

    It would have been so great for his family and his legacy if he’d had a patent. I’m sure during that era, it was difficult to do, especially for a miniorty. I would also like to thank you for including my blog your list of favorites.

  2. Wow, I didn’t know a Native American/African American created the potato chip. What an exciting fact. So sad he didn’t patent it, would’ve made a nice financial asset to his family. Thanks for sharing this. I really enjoyed the information.
